Inspired by recipes found in Prevent and Reverse Heart Disease: The Revolutionary, Scientifically Proven, Nutrition-Based Cure by Caldwell B. Esselstyn Jr. and The Engine 2 Diet, this is my version of delicious vegan, low-fat pancakes.
1/2 cup whole wheat flour
1/2 cup spelt flour
1/2 cup rolled oats
1 1/2 cups oat milk
1 tbsp. baking powder
1 tbsp. vanilla extract
1 tsp. cinnamon
Mix all ingredients in a bowl. If the mixture is too stiff (as some flours might be drier) add a small amount of water. Cook on a non-stick griddle at 350 degrees on each side until golden.
Makes 6 medium sized pancakes (2-3 servings).
I eat these topped with sliced bananas and fresh berries. My wife eats them with berries and a bit of maple syrup.
